Sparkling wine in the Jura is too often an afterthought, a way to use up whatever's left. Not here. Domaine Labet - the Rotalier estate that built its name on obsessively site-specific Chardonnay - puts the same fruit and the same care into its Cremant, blending Chardonnay with Savagnin, the Jura's own tightly wound native white. The result is bone dry and medium-bodied, with orchard fruit and citrus pith, a bready hint from time on the lees, and the saline snap that marks the region's best whites. It has more grip and more personality than most bubbles in its neighborhood. Serve it properly cold, and don't save it only for celebrations.
