Equipo Navazos specializes in finding extraordinary barrels hidden in the aging cellars of Jerez, and La Bota #124 is a standout even among their iconic releases. Sourced from selected solera casks at Bodegas La Guita, this is a very old Fino, aged under flor much longer than usual—so long, in fact, that it’s beginning to evolve into Amontillado. Hence the name: “Un Fino que va para Amontillado”.
The wine opens with intense aromas of toasted almond, sea spray, dried chamomile, and oxidized apple skin. The palate is bone-dry and laser-focused, with powerful umami character, electric acidity, and an almost savory weight that lingers for minutes. It’s flor-driven, yes—but there’s also a growing nuttiness and oxidative complexity that hints at its slow transformation.
Serve it cool in a white wine glass and pair with aged Manchego, jamón ibérico, or anything umami-rich—miso, mushrooms, anchovies. La Bota #124 isn’t an aperitif—it’s a meditative, deeply expressive wine that bridges two worlds of Sherry with grace and gravity.
