"Human wines" from Mount Etna's volcanic slopes—Salvo Foti rejects chemical intervention entirely, fermenting native Carricante and nearly-forgotten Minnella grapes with wild yeasts at 750 meters elevation. The I Vigneri consortium connects modern practice to 590 years of Etna winemaking tradition (the Maestranzi dei Vigneri dates to 1435). At just 11% alcohol, this is restrained, mineral-driven white wine that captures the essence of volcanic terroir. Serve chilled with salty seafood.

His I Vigneri project resurrects the 1435 guild of vineyard workers and spans thirty-plus hectares of rehabilitated hundred-year-old vines planted alberello-style by hand.
