Brothers Florent and Julien Mignon took over their parents' Cramant vineyard in 2015 at just 24 and 28, launching L'Aventure in 2019 as their inaugural release. This 100% Chardonnay Blanc de Blancs draws from three Côte des Blancs villages—Grand Cru Avize and Cramant alongside Premier Cru Cuis, vinified entirely in stainless steel with spontaneous fermentation and no filtration. After 24+ months on the lees, a mere 1.6 g/L dosage honors the Extra Brut style. White peach, white pepper, and taut lemon shimmer across the svelte palate, finishing with lingering chalk dust—precise, minerally, and of tremendous quality for the category.

"Derived from Cramant, Avize and Cuis, the NV Extra-Brut Blanc de Bancs l'Aventure was disgorged in July 2020 with 1.6 grams per liter dosage. Offering up aromas of white flowers, citrus zest and green apple, it's medium to full-bodied, pillowy and precise, with racy acids and a tangy, mouthwatering finish. Based on the 2017 vintage with 40% reserve wines, it didn't see malolactic fermentation." —William Kelley
