Thomas Pico of Pattes Loup is one of Chablis’ most exciting vignerons, known for pushing the boundaries of organic farming and extended aging to craft wines of incredible depth and precision. His 2020 Chablis Butteaux 1er Cru Mise Tardive takes his philosophy even further, allowing the wine extra time on lees before bottling, resulting in added richness, complexity, and integration. Butteaux, a sub-climat of Montmains, is prized for its Kimmeridgian limestone soils, which lend the wine its signature minerality and tension.

Lemon curd, ripe pear, and crisp green apple lead the aromatics, layered with crushed oyster shell, wet stone, and a touch of hazelnut from extended aging. The palate is powerful yet finely chiseled, with a creamy mid-palate balanced by racy acidity and a saline-driven, lingering finish. Compared to Pico’s standard Butteaux, the Mise Tardive bottling offers greater weight, structure, and aging potential, making it a must-have for serious Chablis collectors.

A perfect pairing for seafood, buttered lobster, or aged Comté, this 2020 Butteaux 1er Cru Mise Tardive is compelling now but will continue to develop beautifully over the next 10–15 years. A profound expression of both terroir and winemaking mastery.
