The Produttori is Barbaresco’s benchmark producer. A huge share of the village’s best farmers, representing virtually all of its best terroirs, bring their fruit to the co-op. It is hard to be admitted to the co-op. There is a waiting list; only a few make it.
Once you are in, the rules are strict. You don’t get to hold back any wine for your own labels. This isn’t a region where growers ship off their second best to the co-op and put their pride and joy in their own luxury bottles. You have to meet strict quality controls, of course. The Produttori is only devoted to quality-minded farmers with incredible terroir giving their all.
The winemaking is likewise next level. Aldo Vacca, the co-op’s general manager, is one of the wine world’s greatest artists. If you ever have the opportunity to meet and taste with him, take it; he is also one of the wine world’s great communicators.

"Good bright, dark red. Enticing, Burgundian aromas of cherry, raspberry, wild herbs, spices and truffle, accented by high notes of rose petal and orange peel. Rich, round and fat with concentrated fruit, but given a light touch by harmonious acidity. A real fruit bomb, with complicating nuances of spices and herbs. The rising finish features very fine-grained tannins that arrive late and explosive juicy freshness. Has the firm spine and reserve to support a long and graceful evolution in bottle. "One of the absolute highlights in this portfolio of utterly amazing wines, the 2008 Barbaresco Riserva Asili possesses marvelous depth and richness, but also little of the early approachability and sexiness of Asili. With time in the glass, the wine’s inner perfume gradually emerges, but ultimately this is a Barbaresco to bury in the deepest corner of the cellar. Once again, the Produttori have done a fabulous job with the Asili. The 2008 has nerves of steel and a huge, never-ending finish. It is by far the most imposing and structured Asili I have ever tasted from the Produttori."
