The 2018 Raveneau Chablis Premier Cru “Vaillons” is an exquisite Chardonnay that exemplifies the elegance, precision, and complexity for which Domaine Raveneau is renowned. As one of Chablis’ most celebrated producers, Raveneau brings meticulous attention to every step of the winemaking process, crafting wines that balance richness and tension. The “Vaillons” vineyard, located on the left bank of the Serein River, features Kimmeridgian limestone soils that lend the wine its signature minerality and vibrancy.

In the glass, the wine reveals a pale golden hue with green highlights. The nose is refined and layered, offering aromas of lemon zest, green apple, and pear, interwoven with floral notes of acacia and subtle hints of flint and wet stone. Over time, nuances of almond, honey, and white peach emerge, adding depth and intrigue. On the palate, it is medium-bodied and impeccably balanced, with a creamy texture supported by bright acidity. Flavors of citrus and orchard fruits are complemented by a pronounced saline minerality and a long, precise finish with whispers of chalk and spice.

The 2018 vintage, marked by a warm growing season, imparts ripe, concentrated fruit to this wine while maintaining the hallmark freshness and structure that define Raveneau’s style. This Premier Cru pairs beautifully with fresh oysters, lobster, or seared scallops, as well as creamy pasta dishes or roasted poultry. While already captivating for its vibrant fruit and layered complexity, this “Vaillons” has the depth to age gracefully over the next 10–12 years, developing additional nuance and sophistication.

Raveneau’s “Vaillons” is a benchmark for Chablis Premier Cru, offering a seamless combination of power, elegance, and terroir-driven character—a true treasure for Burgundy enthusiasts and collectors.

"40 ha holding, 95% of which is situated in Vaillons proper with the remainder in Séchet). A discreet application of wood serves as a relatively neutral backdrop for the prominently floral-suffused and airy aromas of citrus, apple, iodine and oyster shell. There is fine volume and richness to the sappy and seductively textured flavors thanks to the abundant amount of dry extract that also serves to buffer the moderately firm acid spine shaping the saline and bitter lemon-inflected finish. This isn't quite as dense as the best of these 1ers, but the combination of elegance and sheer persistence make this is seriously good Vaillons. Note that this too should age well over the next decade and perhaps even a bit longer."

"The 2018 Chablis Vaillons 1er Cru offers striking precision in its combination of density, richness and energy. Absolutely nothing stands out in a wine that truly dazzles from the very first taste. Citrus, slate, white pepper, mint and crushed rocks all race out of the glass as the aromatics come alive with a bit of air. The Vaillons is one of the more complete wines among the 1er Crus in this range." -Vinous
