A Sake masterclass is long overdue on the Flatiron Wine School mezzanine, but we're about to fix that: Will Sugarman, sake educator for the Kome Collective, will teach a masterclass on the Namazake style of sake on Thursday, May 16 at 6pm on our mezzanine.
Nama, translates to "raw" or "fresh," and when combined with "zake" (simply "sake" in Japanese), indicates that a bottle of sake has been bottled without pasteurization. As with rose, or the long-awaited reporting of pitchers and catchers to spring training, the seasonal nama release signals the coming of spring. Namazake contains a variety of active enzymes, which give fresher and fruitier flavors/aromas than pasteurized sakes. In this class we will taste several sakes and delve into the lore, production and flavors of this fascinating beverage with Will as our guide.
