The Zieregg vineyard is Tement’s crown jewel—a high-elevation, limestone-rich site perched above the Slovenian border. Within it, KÅR (a local dialect word evoking “bowl” or “basin”) marks one of the coolest, most limestone-intense parcels. Grown biodynamically, fermented naturally, and aged slowly on the lees in large neutral oak, this is Sauvignon Blanc stripped of flash and pushed into fine wine territory.
The 2021 KÅR is austere and commanding at first: flint, crushed rock, salt, and faint citrus oils. No obvious green notes, no tropical fruit. The palate is firm and textural, carried by acidity that’s more structural than sharp. As it opens, it reveals fennel, grapefruit pith, and chalk—more like great Sancerre or even white Burgundy in its form, but with an alpine clarity all its own.
Built to age, but already complex in its restraint. Ideal with raw seafood, aged cheeses, or dishes that highlight texture and minerality. For those who want to see what Sauvignon can do at the highest level—Zieregg “KÅR” is a benchmark.
