The mood of the times is the de Moors' way of saying this is the wine that captures the whole vintage, a blend drawn from multiple estate parcels in and around Courgis. It's the friendliest, most immediate wine in their Chablis lineup, the one to drink while the crus rest. Certified-organic and hand-harvested, the parcels are fermented separately with wild yeasts, then aged on their lees without batonnage in a mix of used Burgundy barrels, a big 2500-liter foudre, and enamel-lined steel. 2023 was a warm, generous year in Chablis that kept growers on constant mildew watch through a damp late spring, then delivered a big, healthy crop picked from the second week of September, ripe and expressive without losing its cut. Low-sulfur and honest, this is textbook de Moor Chablis: cool, chalky, and alive. Open it young and don't overthink it.

"The 2023 Chablis L’Humeur du Temps, which comes from four parcels, just missed a little cohesion and vigor on the nose compared to previous vintages. Its bouquet features scents of beeswax, walnut and very slight oxidative notes. The palate is well balanced and all about the texture rather than overt fruit.
