Step up from the 7 Crus and the sourcing narrows to four villages, all of them Grand Cru: Avize, Oger, Cramant and Oiry, all Chardonnay, all off the chalk of the Cote des Blancs. Pascal Agrapart farms these parcels organically and ploughs some of them by horse; the estate's vines average around forty years old, with a number of parcels considerably older. This bottling blends three base years, 2020, 2021 and 2022, ferments on indigenous yeast, goes through full malolactic, sits an extended stretch on its lees and is finished extra brut with very little dosage, without fining or filtration. The Avize hillside changes as you climb it, more clay up top for breadth and pure chalk at the bottom for cut, and Terroirs is built to show both at once. Pascal is a mentor to a good share of today's grower generation, and this is the bottle that explains why.

"The NV Extra Brut Blanc de Blancs Terroirs Grand Cru is unusual in that it is a blend of three vintages (2021, 2020 and 2019) instead of the more typical two, because of very low yields in 2021. There's real density and power here, but not at the expense of Côtes des Blancs citrus, floral and mineral character. As always, the Terroirs is a blend of parcels in Avize, Oger, Cramant and Oiry, all Grand Crus. The blend is 20% 2021 and 80% split between 2020 and 2019. Dosage is 3 grams per liter. "Based on the 2022 vintage, vinified in tank, but with a preponderance of reserve wines from 2021 and 2020—also vinified in tank but matured in demi-muids—Agrapart’s new NV Blanc de Blancs Grand Cru Terroirs reveals an aromatic profile of orange oil, pear, nectarine and freshly baked bread. The medium- to full-bodied palate is charming and pillowy, endowed with a generous core of fruit and underpinned by ripe yet vibrant acidity.
