Zero dosage Champagne from a one-hectare parcel called "Le Jardinot" in Polisy, deep in the Aube—closer to Burgundy than the grande marques. Amaury Beaufort started his own label in 2018 after years working his family's chemical-free vineyards (untreated since 1969). 100% Pinot Noir fermented in 15-hectoliter oval casks, made entirely without sulfur. The "XX" is part of his numbered release series. This is Champagne made like Burgundy—biodynamic farming, Burgundian vessels, no additions. More about Amaury Beaufort

Amaury Beaufort broke away from his family's pioneering biodynamic Champagne estate in 2018 to set up his own in Polisy with just one hectare. He's taken his parents' radical approach even further: zero synthetic sprays since 1969, no sulfur additions in the vineyard, native yeasts only, slow fermentation in wood, and extended aging in large casks before release. The result is Champagne that's utterly uncompromising—unfiltered, uninhibited, and totally worth the obsessive precision it took to make.
