A 50/50 blend of Insolia and Grecanico with 7-10 days skin contact from Sicily's Vittoria region, this is a perfectly easygoing orange wine, for novices and ardent skin-contact fans alike. The vines are certified organic, no surprise for COS, one of the island's foremost natural winemakers. We like it with seafood, cheese or on its own.

Vineyard
Sourced from estate vineyards in Fontane and Bastonaca in the Vittoria region.
Orientation
230 meters in elevation. Flat exposition.
Soil
Red soil of medium consistency; made up of subalpine sands composed of limestone and silica.
Viticulture
Hand-harvested. Vines average 12 years of age.
Vinification
Spontaneous fermentation in concrete tanks on the skins with indigenous yeast. Five to seven days of skin contact.
Aging
Aged in concrete vats for eight months followed by three months in the bottle before release.
