A 50/50 blend of Assyrtiko and Limniona that undergoes a secondary fermentation in the bottle à la methode Champenoise). It’s savory and lightly fruity, with notes of dried strawberry, fresh-cut herbs, salt and limestone minerality. An appetizing and satisfying aperitif, and it made an excellent foil to Christos’ wife’s homemade spanakopita.
