Listan Negro is the Canaries' workhorse red, juicy and brambly, and this is Bermejos' carbonic take on it, made for pure chillable pleasure. On the island of Lanzarote, the driest of the Canaries, vines grow in craters dug through meters of volcanic ash and ringed by stone walls against the wind, so yields are minuscule and every bottle is hard-won. Carbonic maceration coaxes out the grape's brightest, brambliest side, all blackberry, cherry, and licorice, while the brutal volcanic terrain leaves behind subtle notes of sea salt and smoke. Pop it in the fridge for twenty minutes and drink it with abandon.
