One of Bordeaux's oldest estates—Benedictine monks founded it in the 13th century, documented in a deed from 1292. Grand Cru Classé for both red and white (one of only six châteaux with that distinction), the white is 65% Sauvignon Blanc and 35% Sémillon from 42-45 hectares—the largest white wine production in Pessac-Léognan. The Perrin family has owned it since 1956; their sons Eric and Philibert now manage. Aged 10 months with 25% new oak. Legend has it the monks exported white Carbonnieux to the Ottoman sultan as "mineral water" to skirt the wine ban.
