Pichon-Baron is one of the great 2nd Growths of Pauillac, owned by AXA Millésimes since 1987 and given decades of careful stewardship under Christian Seely (now AXA's overall director). 2007 was a difficult Bordeaux year — wet, cool, demanding rigorous selection — and even the top Pauillacs came out leaner than usual. But Pichon-Baron has always made beautiful wine in tricky vintages: the estate's deep gravel terroir, its old-vine Cabernet Sauvignon backbone, and that meticulous AXA approach produce wines of structure and class even when the weather conspires against it. Eighteen years on, the 2007 is drinking beautifully — cedar, graphite, cassis softened to dried currant, sweet tobacco, savory earth, fine-grained resolved tannin. A leaner, more classical Pauillac built for the table. Drink over the next several years.

"The 2007 Pichon-Baron has a light, slightly earthy bouquet that appears less fruit-driven than previous bottles. Mulch and woodland aromas nudge past the light black fruit, implying that the aromatics will mature more quickly than other recent vintages. The palate is medium-bodied with gritty tannin, moderate depth and chewy black fruit, though the finish seems to have dispensed with the precision that I discerned in its youth. "This is the first wine of this vertical tasting in which the barrel aging is aromatically apparent, but that is not to its disadvantage. Nose of mocha, cocoa beans, and smoky elements with graphite and a perfume of blackcurrant bud emerging after aeration. The palate reveals a peppery note and a mouthfeel that is dense and structured with fine tannins, yet it seems more elegant than the nose, especially on the fine-boned, close-knit finish. A rather singular expression of Pichon Baron."
