COS (short for Cilia–Occhipinti–Strano) has long been a pioneer in natural Sicilian winemaking, and their Contrada bottling is a focused, elegant take on Nero d’Avola. Unlike many modern examples that lean toward ripeness and power, COS aims for transparency: spontaneous fermentation, no new oak (usually aged in cement or neutral wood), and a focus on site expression.

The 2020 vintage is bright and savory, with aromas of red currant, blood orange peel, dried herbs, and dusty earth. On the palate, it’s medium-bodied and refined, with fine tannins and stony minerality that reflect the red limestone soils of the vineyard. There’s a rustic charm, but also a quiet sophistication—a Nero d’Avola that thinks like a Cru Beaujolais or a light Burgundy.

Perfect with grilled vegetables, lamb, or Sicilian-inspired dishes, this is a bottle for those who want to explore the fresher, earthier side of Southern Italian reds.

If you had to pick a single producer responsible for the Sicilian renaissance, it would be COS. They were the first to show the world that Sicily's artisanal side is not just delicious, but worthy of the kind of attention nobody would ever pay to the island's mass-produced Nero d’Avola. They launched a revolution.

COS was founded by three men whose last names start with C, O and S. The "O" — Giusto Occhipinti (uncle of Arianna)— has been the driving force at the domaine, introducing organic and biodynamic techniques and obsessing over the correct vessels for elevage.

Giusto found the perfect farming and winemaking methods to express their unique Vittoria terroir. Soils in this part of Etna have a layer of red clay over a limestone substrate. With the reliable weather you have ideal conditions for producing consistently fresh and balanced wines. It’s no wonder that wine has been produced in this corner of Sicily for almost 3,000 years!

Vineyard
Grapes are sourced from estate vineyards in the area of Bastonaca in the Vittoria region in the South-East of Sicily.
Soil
Red soil of medium consistency; formed of subalpine sands with limestone interwoven with compact layers of fresh clay.

Hand-harvested from 50 year old vines.
Vinification
Spontaneous fermentation in concrete on the skins with indigenous yeast.
Aging
Aged for two years in larger barrel followed by one year in concrete and then six months in the bottle.
