Hugo Mathurin and Talloulah Dubourg founded Domaine de Cassiopée in 2020, acquiring five hectares in Sampigny-lès-Maranges and immediately converting to organic viticulture, achieving certification by 2023. Their biodynamic orientation and lunar-calendar farming produce a wine of striking purity from limestone-rich slopes in the elevated southern Côte d'Or. Minimal sulfur and low-intervention cellar work yield a Chardonnay with racy acidity and saline minerality that defies Maranges' reputation as merely Burgundy's affordable back door.
