Philippe Chavy is a small grower in Puligny-Montrachet whose family has farmed vines in the village since 1495. Philippe took over from his father Gérard in 2003 and works just 7 hectares across Puligny, Meursault, and Saint-Aubin. The estate practices organic viticulture and harvests entirely by hand. This village Meursault comes from a blend of parcels on the Puligny side of the appellation, fermented with native yeasts in barrel (about 20% new oak) and aged sur lie for 12 months with minimal stirring to preserve freshness. Chavy's style emphasizes minerality and tension over richness—expect white flowers, citrus, and wet stone aromatics with a taut, saline finish. A Meursault for those who prefer elegance to opulence. Serve with shellfish, roasted white fish, or mild creamy cheeses.
