Prologo means 'prologue,' and this wine introduces the full character of De Fermo's terroir—the land between the Adriatic and Gran Sasso where clay and pebbles shape Montepulciano into something both vigorous and elegant. Spontaneously fermented in concrete tanks, then matured 8 months in wooden barrels and bottled unfiltered, it unfolds with marasca cherry and stewed plum, black pepper and graphite, finishing with a tannin structure that speaks to aging potential. This is a wine ready now but also patient.

Stefano Papetti Ceroni was a successful Bologna lawyer when he stumbled upon a 1785 winery buried under his wife Eloisa's family vineyards in Abruzzo. He scrapped his legal career, took no enology training, and taught himself biodynamic farming and minimal-intervention winemaking. Now his Montepulciano and Pecorino appear on the lists of top restaurants. Self-taught mastery.

Named “Prologo” because it was the first wine Stefano and Eloisa ever bottled, this stunning wine shows off Montepulciano d’Abruzzo in its full dynamic range. From older vines picked last during harvest, “Prologo” ferments spontaneously in a combination of concrete tank and open-top wooden cask; a staggering two-month maceration slowly extracts every element the couple’s intensive biodynamic farming brings to the fruit. It spends 18 months in 20-hectoliter Stockinger casks before being bottled without fining or filtration, and is released several years later than the rest of the lineup. Much darker in its fruit and more somber in its carriage than the lighthearted Rosso “Concrete” above, “Prologo” nonetheless displays remarkable poise and elegance, remaining fresh and nimble despite its immense concentration. Its solar character is offset beautifully by a cool, stern minerality that broadens on the finish and promises to blossom further with age.
