"Deep golden straw yellow. Really savoury and saline and a little meaty on the nose with subdued notes of chamomile. Seriously dry and slow to develop on the palate. It’s like a canvas revealing the mineral character rather than the fruit of the place of origin. Long and complex yet in a very subdued way. Will be fascinating to see how this ages."
