There is no wine in the world quite like Pegau, and this is the plush, hedonistic side of it. While much of Châteauneuf-du-Pape modernized — destemming, polishing tannins, buying new oak — Laurence Féraud refuses to change a thing: late harvest, whole clusters left in the vat, and aging in ancient neutral foudres that have seen decades of wine. The 2015 vintage came from a warm, sunny year, and it shows in the wine's flesh: this is the richer, rounder, more voluptuous of the pair, sweet-fruited and generous, with its firm structure cushioned by ripeness. It's the full garrigue experience — lavender, thyme, crushed black olive, leather, cured meat — over dark blackberry. Basically the liquid equivalent of a slow-roasted leg of lamb, and the more immediately open bottle to pour tonight. High in alcohol and packed with soul, so share it.

"Now that it has been in bottle a while, the 2015 Chateauneuf du Pape Cuvee Reservee is looking even better than I projected based on last year's prebottling sample. It's all violets, cherries, subtle allspice and clove and traditional garrigue notes of lavender and thyme.
