Premier Cru Chablis from a house that doesn't follow the crowd: Moreau-Naudet takes its cues from Raveneau and Dauvissat, aiming for ripe, shapely wines with deeply concentrated substance rather than lean, austere Chablis. The domaine's Vaillons comes from about 1.7 hectares across three of the cru's lieux-dits (Roncière, Séchet and Épinottes), and the Séchet vines are 75 years old. Vaillons sits on the left bank of the Serein and has a name for a slightly softer, more open style than the firmer right-bank crus, while keeping that classic Chablis cut. The domaine always ferments on native yeasts and leaves the wine on its lees for a long time. Since Stéphane Moreau's sudden death in 2016, his wife Virginie has run the estate with Coco, his longtime cellar master, and their daughter Nell joined in 2020. That's another generation in a family whose roots in Chablis go back centuries. Serve chilled, not ice-cold.

"A seductively exotic nose with hints of gooseberry, lime and passion fruit. There is a silky texture and a very 'left bank' expression of finesse and elegance. It lacks the power of warmer years such as 2023 or 2022 but Chablis lovers are amply compensated by its delicacy. The grapes are from four parcels totalling 1.78ha in satellites that make up Vaillons premier cru: one each in Epinottes and Roncières, and two in Sécher; they are fermented exclusively in tank."

More about Moreau-Naudet

Domaine Moreau-Naudet is a great source for excellent, nonconformist Chablis. Taking cues from legendary producers like Raveneau and Dauvissat, Moreau-Naudet makes ripe, shapely Chablis that define minerality with deeply concentrated substance. The flinty and austere wines that have become the norm for this region are less a reflection of the region’s true terroir and more a side-effect of high yield, early picking and machine harvesting. Moreau-Naudet does the opposite. By picking late and harvesting by hand, as well as tending their vineyards biodynamically, Moreau-Naudet is able to make complex wines that many Chablis producers with wines similarly priced have not.

Winemaker Stephane Moreau suffered an untimely and tragic death in August 2016. When he passed unexpectedly it sent a shock through Burgundy and the wine world beyond. However, his family and assistant winemaker rallied and worked hard to maintain Stephane's racy and detailed style for the 2016 vintage. Since then Stephane’s wife, Virginie Moreau-Naudet, has carried on her late husband’s philosophy and style with resounding success. Tasting these wines today we feel inspired and grateful for her and her family’s perseverance.

Tasting Profile

Expect a riper, rounder take on Premier Cru Chablis: lemon, green apple and white peach, with the chalky, oyster-shell minerality the appellation is known for. Long lees ageing typically adds a creamy texture and real mid-palate depth, while Vaillons' softer, open character still carries bright, cutting acidity through a dry, saline finish.
