Village Chassagne from one of the appellation's current reference points, in a vintage that gave white Burgundy its most classic shape in a decade: citrus, chalk and stinging acidity rather than richness. Thibault Morey blends three parcels — Les Chaumes, Lombardes and Charrières — across the limestone and clay that runs through the village. About 15% of the wine ages in clay jars to protect the freshness; the rest goes into oak barrels of 228, 350 and 400 liters, with new wood dialed up or down depending on the year. The domaine is certified organic (2018) and worked biodynamically since 2015, having given up herbicides back in 2002. Drink over the next five to eight years.
