From Chablis' oldest continuously operating house (since 1654)—58-year-old vines rooted in Kimmeridgian limestone packed with billions of fossilized oyster shells from when Europe was sea. Fermented entirely in oak with 20 months aging (40% new), this Grand Cru delivers the flinty minerality that defines great Chablis alongside fuller, riper expression than many peers. Orange blossom and apricot infuse citrus fruit with distinctive marine character. Drinking window: now through 2040.

"Here there is again enough wood to comment upon setting off the moderately exotic aromas of passion fruit, white peach, apricot and spice. The sleek, rich and attractively textured flavors possess a bit more mid-palate stuff along with very good minerality that seems to become more prominent on the sappy bitter lemon-inflected finale. I would note that it's possible that this will add more depth than more rating predicts and if so, my score may be a bit too conservative."

"The 2019 Chablis Les Preuses Grand Cru has an attractively, distinctly marine/oyster-shell-infused nose, wonderfully defined and a little fuller than the Blanchot. The palate is extremely well balanced with a spicy, peppery opening; orange peel and ginger notes take over from there. Very "Preuses" in style, it has one of the deepest finishes among Servin's Grand Crus. Superb." —Neal Martin
