“Cuvée Louis Salmon” is Billecart-Salmon’s prestige Blanc de Blancs, named for the brother of Elisabeth Salmon, who was a passionate oenologist and played a key role in shaping the house’s style. This bottling is crafted only in exceptional vintages, using 100% Grand Cru Chardonnay sourced from some of the Côte des Blancs’ most prized villages—Chouilly, Cramant, Oiry, and Mesnil-sur-Oger.

The 2012 vintage was marked by low yields and high ripeness, producing wines with power and structure. This cuvée was fermented partially in oak barrels (about 15%) and underwent extended aging on the lees—nearly 10 years—before disgorgement. The dosage is kept low (~3.75 g/L), in line with the wine’s linear, mineral-driven style.

The result is a Champagne of quiet intensity: white flowers, lemon curd, hazelnut, and oyster shell, all wrapped in a precise, chalky frame. While already expressive, it’s built to age beautifully, with decades of potential ahead.

Even so, this remains a very young Champagne, one that needs time to shed some of its considerable baby fat.
