Ca’ Viola’s Barolo Riserva Sottocastello di Novello 2016 is a single-vineyard Nebbiolo from the Sottocastello cru in the village of Novello—one of the Barolo zone’s highest and most distinctive sites. The steep, limestone- and clay-rich slopes here produce wines of both power and refinement. Winemaker Giuseppe “Beppe” Caviola, a respected enologist and consultant, crafts this Riserva traditionally: long maceration, native-yeast fermentation, and extended aging (minimum 30 months) in large oak casks followed by years of bottle rest.
