Lucien Aviet went against the grain in the 1960s, planting trousseau and savagnin when his neighbors were pulling up old vines for Chardonnay. He believed in native yeasts and low yields, and his son Vincent still does. The different trousseau cuvées, each named for the geologists who helped select terroir, showcase Jura at its most serious and complex.
