Lucien Aviet & Fils has championed Jura traditions since the region's earliest bottling days, now selling 97% directly to devoted followers. This 2022 fermented with indigenous yeasts in temperature-controlled tanks, then aged a year in large foudres, yielding a wine of citrus brightness, white flowers, and intriguing almond-hazelnut texture. Lucien Aviet went against the grain in the 1960s, planting trousseau and savagnin when his neighbors were pulling up old vines for Chardonnay. He believed in native yeasts and low yields, and his son Vincent still does. The different trousseau cuvées, each named for the geologists who helped select terroir, showcase Jura at its most serious and complex.
