Inocente En Rama is one of the great traditional Finos, and in magnum—especially from the 2024 spring saca—it takes on even more resonance. Made from single-vineyard Palomino grown on the chalky albariza soils of Macharnudo Alto, this is Sherry with soul: fermented in old oak barrels, aged under flor in a 10-criadera solera system, and bottled with minimal intervention.

The En Rama version is drawn straight from the cask—unfiltered and undiluted—capturing all the intensity and nuance of the wine as it lives in the bodega. The 2024 saca shows exceptional clarity and tension: crushed almond, green apple skin, sea spray, and chamomile, layered over a palate that’s dry, electric, and deeply saline. The magnum format adds even more texture and aging potential.

This is Fino for lovers of Jura whites, oyster shells, and sharp air. Serve it cool (but not cold) with jamón ibérico, anchovies, or simply a bowl of Marcona almonds and a quiet hour. A must-have for En Rama collectors—and a benchmark for what unfortified-style Sherry can be.
