Sancerre from the source. Chavignol is the most celebrated village in the appellation, home to the famous Monts Damnes vineyard and the pungent Crottin de Chavignol cheese. The Martin family farms 19 hectares here on Kimmeridgian limestone—the same ancient seabed formation found in Chablis and Champagne—producing Sauvignon Blanc with more body and minerality than typical Sancerre. Fermented with native yeasts in stainless steel, aged on lees for texture. This is Sancerre for people who find most Sancerre too simple. The goat cheese pairing is obligatory.Cortona: Italy's Syrah country. Organic estate, Rhone-like terroir. Fresh, floral, medium-bodied. Serve slightly cool.
