An Almost-1er Cru Chablis (and Other Great Deals) from Domaine Servin

 

Another outstanding producer whose wines remain exceptional values is François Servin, who has as spectacular a lineup of premier and grand cru parcels as one will find in any domaine in Chablis!

Servin’s premier and grand cru wines are indeed outstanding — and outstanding values — and we’re happy to have the pick of the litter for you here today (which includes some very top wines). But the greatest value in Servin’s lineup of great values is undoubtedly one of his “village level” wines from Les Pargues.

We put “village level” in scare quotes because in the 19th century this vineyard, lying between the premier crus Vaillons and Montmains, was considered every bit their equal. But after phylloxera, Pargues’ owners were slow to replant. And when the French regulators established what we know today as premiers crus, it was excluded.

But great terroir isn’t always reflected in a wine’s label or price. And local families, like the Servins, knew what they had and replanted it over time. The Servins’ first plantings, more than 60-years-old now, make a next-level village wine, the cuvée “Selection Massale.” Burghound gave the ‘23 one of his little “Outstanding Top value” ♥️s and raved about the old vine character (the full quote is below).

John Gilman loved this one as much Burghound did: “The 2023 version is gorgeous, offering up a vibrant and precise bouquet of lime, tart orange, flinty minerality, dried flowers and a touch of anise in the upper register. On the palate the wine is crisp, pure and full-bodied, with a superb core of old vine fruit, great mineral undertow and grip, impeccable balance and a long, complex and electric finish. This is clearly the quality equivalent of a top premier cru. Great juice and a superb value! 2025-2055. 92+.”

“An elegant and airy nose freely reveals its aromas of lemon-lime, tidal pool and spice-inflected pear and apple scents. The super-sleek, intense and equally attractively textured flavors culminate in a bone-dry, youthfully austere and sneaky long finale. This could use more depth but the potential is clearly present. I would add that this refined effort is quite classy (“Outstanding Top value ♥️,” Burghound).

Domaine Servin, Chablis Grand Cru Bougros, 2023 $94.99
“The ripe and agreeably fresh aromas of green fruit, essence of pear and tidal pool are trimmed in moderate wood toast. There is better mid-palate density to the more powerful and muscular flavors that possess a generous mouthfeel before tightening up on the impressively persistent if slightly rustic finale. This built-to-age Bougros has the structure to repay at least a decade of keeping, perhaps even a bit more if you enjoy well-aged Chablis.” (Burghound).
