Ask us which Champagne we actually order in restaurants and the answer is usually this one. Pascal Agrapart has farmed this way in Avize since 1984, well ahead of the grower Champagne boom; the estate dates to 1894, has passed through four generations, and remains tiny. The 7 Crus is a snapshot of seven parcels in seven villages, about 70% of it Grand Cru fruit from Avize, Oger, Cramant and Oiry with Premier Cru parcels filling out the rest, mostly Chardonnay with a little Pinot Noir for breadth and power. Part of the blend is raised in old, neutral barrels and part in stainless steel, fermentation runs on indigenous yeast, and the dosage stays low to keep the chalk of these sites in focus. This release is built on the 2023 harvest, and like every 7 Crus it drinks well the moment you open it.

"The NV (2022) Brut 7 Crus is such a fabulous introduction to this range. In this release, the 7 Crus is especially generous, which makes it all the more appealing in the near term. Citrus confit, marzipan, dried flowers, mint and crushed rocks build in the glass, finishing with notable substance and power. This release, based on 2022, is one of the best recent 7 Crus I can remember tasting. A standout. Dosage is 4 grams per liter. "The NV Brut 7 Crus, based on the 2022 vintage (50%) and complemented by reserve wines from 2021, blends the juices from the end pressing of all villages of the estate and includes 10% Pinot Noir from Avenay-val-d'Or. Disgorged in October 2024 with with a dosage of five grams per liter, it’s a wine with more a immediate personality, offering up aromas of peach, pear and bread dough. Ample and textural, it’s underpinned by succulent yet vibrant acidity. The one wine in range that can ever be described as simple, it is less coherent with the rest of the lineup, which exclusively derives from the Côte de Blancs." —Kristaps Karklins
