This is the easiest way into one of Chablis's great family names: the village bottling from the Moreaus, the family behind the Clos des Hospices. It's from a 2025 vintage they say left them fully satisfied on quality, if not on quantity. Yields came in at 36 to 42 hectolitres per hectare, lower than they'd hoped. The spring was frost-free, July and August were hot and dry, and then up to 60mm of rain fell at the end of August. They started picking on September 3 and waited for the grapes to ripen fully before bringing them in. The family's Chablis story starts in 1814, when barrel maker Jean-Joseph Moreau founded a merchant house, and in 1904 they bought the Clos des Hospices from the Hospices de Chablis. When the merchant business was eventually sold, they kept every vine. Fabien Moreau, the sixth generation, took over from his father Christian in 2001 after coming back from New Zealand, and 2002 was their first vintage made and sold as a domaine again. On their own vineyards they plough, have used no pesticides in the soil since 2004 and have been certified organic since the 2013 vintage, and they pick by hand and ferment only with natural yeasts. It's not flashy or showy, just honest Chablis from people who have spent two centuries in the place. Put it next to a plate of oysters.
