IWA 5 is the premium sake project of Richard Geoffroy, former chef de cave at Dom Pérignon. "Assemblage 4" is a Junmai Daiginjo blend combining four elite rice strains and a quartet of yeast varieties, all aged in both modern stainless tanks and traditional cedar kura.

Produced in Toyama and bottled as genshu, this sake showcases refined aromatics of white flowers, pear, and wet stone, with a dry, precise finish. It's a contemporary, terroir-inspired sake reflecting Champagne-level artistry.
