Made by Ian Brand under his Paysan label, this single-vineyard Sauvignon Blanc comes from the rocky, riverbed soils of Zabala Vineyard in Arroyo Seco—a site known for cool ocean influence and alluvial stones that help preserve freshness and vibrancy. The 2023 vintage is a laser-focused, Loire-inspired take on California Sauvignon: all citrus, cut grass, and flinty drive, without a trace of tropical excess.
It opens with lime zest, green apple, and a whisper of jalapeño, followed by a palate that’s bright, bone-dry, and linear. There’s serious minerality here—chalky, even slightly saline—with a tension that makes it endlessly food-friendly. No oak, no tricks—just clean, snappy fruit and crisp acidity.
