If you like fresh, mineral-driven white wine, you'll go bonkers for the wines of Paul-Henry Pellé. This guy is a star. Qualitatively, these wines can go tête-a-tête with top-shelf Sancerre, but they're a great deal less expensive. Farming is organic.
Pellé uses both stainless steel and wood, not only for élevage, but fermentation as well. This explains why the wines have bracing citric electricity tempered by a suave, creamy texture – "lemon curd" often pops up in our tasting notes.

VINEYARD
Le Carroir is a 1.25 hectare vineyard in the village of Morogues from massale selection plantings in 1976. 6,500 vines/hectare
SOIL
Silex, silex, silex (with a bit of sand and iron). This is the only silex-centric site in the Pelle lineup as kimmeridgian has a uniquely strong presence in the village of Morogues (relative to other Menetou-Salon villages).
VITICULTURE
Practicing organic. Soils plowed. Hand-harvested.
VINIFICATION
Direct pressing of grapes, fermented with natural yeast in a combination of wooden vats and tank.
AGING
Aged in a combo on 70% wood (Foudres and used 400L barrels) and 30% tank.
