It's often in the coolest, steepest, outskirts of Chablis that you can find some of the best value. These wines are called Petit Chablis.
For soil geeks, you may be able to tell that Petit Chablis tend to be made from grapes grown in Portlandian limestone (rather than the Alpha dog, Kimmeridgean).
Petit Chablis is great for drinking young (and the last few vintages have been incredible!) and pairing with light fare on a warm evening.
