Kimmeridgian limestone—the same fossil-rich marl that defines Chablis—underlies this single-vineyard Blanc de Blancs from Champagne’s southernmost frontier. The Champs Viole parcel, originally selected by monks for its prime south-facing hillside position, is planted to Chardonnay vines over fifty years old. Fourth-generation vigneron Aurélien Gerbais converted to organic farming in the early 1990s after a health crisis from pesticide exposure, earning certification by 1996—decades ahead of the trend. Trained in Beaune rather than Reims, his Burgundian sensibility shows in every bottle. This cuvée blends the 2020 base with a perpetual reserve dating back to 2011, ages 36 months on lees, and receives just 3 g/L dosage. In magnum, the wine’s fresh acidity and fossil-driven minerality gain even greater complexity and longevity.
