Les Perrières takes its name from the stone quarries beneath it - oolitic limestone directly under the vines - and that stony character comes through plainly in Robert Chevillon's bottling. The holding is tiny, six-tenths of a hectare of roughly fifty-year-old vines, worked by the fifth-generation brothers Bertrand and Denis Chevillon under lutte raisonnée. 2019 was a small, concentrated vintage in Burgundy: April frost and a difficult flowering cut the crop, then a hot, dry June and July concentrated what was left, giving reds around 14% alcohol that still held low pH and real acidity. That combination suits Perrières, whose stony austerity can use a little vintage generosity. At seven years it is still young, and this bottle comes from a private cellar - decant it a few hours ahead, or give it another five to ten years.

Domaine Robert Chevillon is basically the gold standard for Nuits-Saint-Georges. The estate has belonged to the Chevillon family for generations, and today brothers Denis and Bertrand (fifth generation) make wines from eight Premier Cru terroirs plus meticulous village cuvées. Robert Parker's critic William Kelley called them 'one of my favorite addresses in all of Burgundy.' These are characterful, age-worthy, utterly Burgundian. No compromise.
