The red counterpart to Son Llebre Blanc—Escursac, Callet, and Callet Negrella from Cati Ribot's volcanic-soil vineyards in northeast Mallorca. Cati makes the only bottled varietal Escursac wines in the world from 1.2 hectares her father planted in 2006. Organic since 2012, biodynamic since 2014, minimal intervention. Her Ve d'Avior label (launched 2019) is dedicated to reviving these nearly extinct native varieties. Low alcohol, minimal sulfur. If you want to drink something genuinely rare—grapes that exist almost nowhere else—this is it.
