François Raveneau’s sons Bernard and Jean-Marie command eight hectares of Chablis’s finest sites—three Grand Crus and six Premier Crus scattered across the region’s Kimmeridgian landscape. Butteaux, among the highest of their holdings, sits on shallow marly limestone with blue clay, south and east-facing for ripeness, windswept for freshness. The wine tastes of flint and tension, strength without heaviness. In 2023—a warm, approachable vintage that Isabelle Raveneau calls a ‘party wine’—Butteaux still demands patience, rewarding cellaring with mineral intensity.

"Uniting the depth of Forêt with the elegance and energy of Montmains, the 2023 Chablis 1er Cru Butteaux is one of the most complete and seamless premiers crus in Raveneau’s range. Based on similar clay-rich soils as Forêt but at a higher altitude, it’s sourced from 55-year-old vines that produce small, concentrated berries. It wafts from the glass with a deep bouquet of grapefruit zest, wheat toast and acacia mingling with oyster shell. "The delicious 2023 Butteaux from Raveneau boasts pronounced aromas of grapefruit and gooseberry, underpinned with salty minerality. The texture is more linear, as the crisp acidity brings a bit more tension, but there is also more extract here. The domaine owns two parcels that total 1.5ha in this lieu-dit (part of the larger Montmains umbrella on the left bank of the Serein). As Isabelle Raveneau describes it, the vines are planted in shallow soils at the top of the slope in the windiest location, driving the tension in this delightful wine."
