Hébrart has holdings in a number of top sites in both the Vallée de la Marne and the Côte des Blancs but is a specialist in the great village of Mareuil-sur-Aÿ, where you find top spots like the Clos des Goisses and Selosse’s Sous le Mont.

When he blends his top cuvées, he has a lot of great source material to choose from but even Hébrart’s entry-level wines are pitched absolutely perfectly for Thursday. They're elegant and complex, and will elevate any dish. But they're not flashy or over the top: more supporting players than showboaters.
