At the foot of Mont Blanc, in the far northwestern corner of Italy’s Valle d’Aosta, Ermes Pavese makes one of Italy’s most distinctive white wines. His Blanc de Morgex et de la Salle is made entirely from Prié Blanc, a rare grape grown on its own roots at some of Europe’s highest vineyards—many above 1,200 meters.

Farming is organic, and everything is done by hand on steep Alpine slopes. The wine is fermented in stainless steel and bottled early to capture its brisk acidity and mineral profile.

The 2023 vintage is pure and zippy, with flavors of green apple, alpine herbs, lemon zest, and crushed rock. It’s light in body but has incredible lift and clarity—like a cold spring stream in wine form. There's no oak, no fat—just pure mountain refreshment.

Ideal as an aperitif or with raw seafood, fresh cheeses, and all things green and herbal.

A stunning wine from the highest vineyard site in Europe on the summit of Mont Blanc. Because these vineyards are so isolated, Pavese has been able to work with the original, pre-phylloxera root stock since that malady never infiltrated this area when it came sweeping through Europe many years ago. Annual production is about 12,000 bottles of this austere, racy, mineral white wine with vivacity and length.
