Ayala was founded in 1860 by Edmond de Ayala, who had married Gabrielle d'Albrecht two years earlier—she brought Château d'Aÿ as her dowry. The house is now part of Champagne Bollinger and represents over 160 years of heritage. Le Blanc de Blancs A/18 marks the first vintage of Ayala's signature cuvée formula: 100% Chardonnay from six complementary Grands and Premiers Crus across the Côte des Blancs and Montagne de Reims. After a minimum of six years on lees—far exceeding requirements—the wine receives an Extra Brut dosage of just 5g/l. The 2018 vintage delivered exceptional ripeness and balance. Expect elegant aromas of pear and jasmine with chalky minerality and creamy texture. Outstanding aging potential of 15+ years. Serve well-chilled.

More about Ayala

Champagne Ayala was founded in 1860 by Edmond de Ayala, a Colombian diplomat's son who married into the vineyard owners of Château d'Aÿ. They were a founding member of 'Grandes Marques de Champagne' in 1882 and hit their stride in the 1920s-30s. In 2005, Jacques Bollinger's family company acquired Ayala. These are champagnes built on heritage and consistency, made with real discipline and respect for the terroir.
