Telti-Kuruk is a grape that almost disappeared. Native to Ukraine's Black Sea coast, where it has grown for centuries, it's now so rare that Slow Food added it to its catalogue of endangered foods. Beykush is one of the few wineries keeping it alive, farming just 100 meters from the sea in the Mykolaiv region. The name means 'fox tail,' after the shape of the grape clusters. The grapes are hand-picked in late September, given a brief cold soak, fermented cool in stainless steel, and aged six months on the lees with regular stirring. The result is a distinctive, coastal white you simply can't taste anywhere else, and drinking it helps keep a piece of Ukrainian heritage going.
