Almost every Etna red you know comes from the volcano's cooler north slope. Ciro Biondi farms the southeast, above Trecastagni, where the sun is warmer and the site more sheltered from wind, and his Nerello comes out more perfumed and open-knit, with softer edges: if the north is Etna's Serralunga, this is its La Morra. Outis is 80% Nerello Mascalese with 20% Nerello Cappuccio, largely from Contrada Ronzini at around 640 meters on east-facing volcanic sand, fermented in stainless and raised about ten months in a mix of tank and neutral barrel before bottling without fining or filtration. The name comes from the Odyssey, where Odysseus tells the Cyclops his name is "Outis" - nobody - in a cave that Sicilians will tell you sat right here on the mountain. It is a fitting joke for a wine that seems to insist there's nothing much going on, right up until you give it twenty minutes in the glass. Biondi's most approachable bottling and the easiest door into a great Etna address.

Tasting Profile

Pale ruby. Wild strawberry, blood orange, dried herbs and a smoky volcanic edge. Medium-bodied and lifted, with bright acidity and fine, faintly dusty tannins. Savory, mineral finish.
