Barbadillo’s Manzanilla en Rama “Pastora Pasada” comes from select soleras in Sanlúcar de Barrameda, where flor aging creates saline intensity. Bottled en rama (unfiltered), this NV release shows extra depth from extended time under flor, bridging the freshness of young Manzanilla with the complexity of an older Pasada.

Typical notes of sea salt and bitter almonds along with a deeper, earthier minerality and a black and red spicier finish. Unstripped of its texture, it has a buoyant body, velvety texture and an extended finish.

A benchmark small-batch sherry in a 375ml format, perfect for savoring alongside olives, jamón, or simply on its own.

"I tasted a recent bottling of the NV Manzanilla Pasada en Rama Pastora, bottled in 2022 (clearly written on the back label) and in the context of the younger Manzanillas they are releasing, with complexity, depth and age. It has some varnish and nutty aromas, taking it toward a Manzanilla Pasada in terms of complexity and depth. This is a great wine, with an average age of nine years. There are 10,000 bottles released per year, and every year is now specified on the back label."

Founded in 1821 by Benigno Barbadillo, an entrepreneur from Burgos who made his fortune in Mexico, Barbadillo is the biggest Manzanilla producer and one of the biggest sherry houses overall. They own 500 hectares of vines, vinify all their own base wines, and age them in historic bodegas. Solear Manzanilla—their signature—set the template for everything that followed. Available in 50+ countries, they celebrated their 200th anniversary in 2021.
