Chicho Moldes left a job as a bank economist to make Albariño, and this is the bottling where you can read his approach most clearly: whole-cluster pressed, fermented with wild yeast, malolactic blocked, then eight months on the lees split between stainless steel and large neutral French oak from 350 up to 3,500 liters. The oak isn't there for flavor — it's there for texture, and the wine ends up with a creamy middle that never dulls the citrus snap. Fruit comes off 40-year-old vines across Padrenda, Cambados, Meaño and Sanxenxo, on decomposed granite and schist; pedreira is Galician for quarry, which tells you what the ground underfoot is like. Of everything Fulcro makes this is the most available, and it's the best argument for the house style.
