Yes, the yeast went to space. Boken - the name means adventure in Japanese - built this Tokubetsu Junmai around one of the first yeast strains sent up to the International Space Station, where it spent ten days orbiting 400 kilometers above the planet before coming home to a brewery. Gimmick? Maybe, except the sake is genuinely good. The rice is polished to 60 percent, no distilled alcohol is added, and the sake meter value sits just on the dry side of neutral, so it drinks clean and crisp rather than sweet. This one is built for the table, not for contemplation. Serve it chilled, somewhere between fridge-cold and cellar-cool, and point it at raw fish.
